The story behind the Spicy Beaches "Indian Rocks Beach Boys". .
Chef J Mitchellknew he had a true passion for both the beach and great food since early childhood. But how does one actually live at the beach and make not only a living but a life there? Making “magic” in the kitchen, his Mother and Grandma greatly influenced his dream to become the chef who left people “always wanting more”. His first “dinner party” at age 18 was met with “mixed reviews”.  That never happened in the kitchen of his childhood, and he vowed that would never happen again. He sharpened his knives and his skills, eager to be the best at culinary school. After graduation he worked his way up the kitchen “food chain” at various restaurants from line cook to head chef. Leaving the East Coast, Chef J traveled to the Southwest where he learned even more. Where does a great chef apply his artistry? A 1,200 inmate prison of course! No, not as an inmate, but as the Food Service Director! Blending in “a little passion for flavor”, he was able to raise the morale of the inmates three daily meals. In prison the captive “customers” don’t have much choice about what they eat, but he did what he could to give them his very best. This traveling Chef moved on to live in Mexico for time. There he learned to prepare authentic foods of the Mexican culture. Later a “visit” to a friend who lives on the Barrier Islands of Florida's West Coast became the “vacation” that would never end. As soon as he arrived, he knew he had found his paradise and to this day I have not left. He now shares his slice with his children and friends on the Spicy Beaches of IRB. Mayor James” has been in love with IRB for over 30 year. This “Peoples Mayor of the 7th Ave. Access", he is known, for his tendency to watch over the patch of beach he and his friends tend to flock to. He can be seen with a rake in hand manicuring the sand, and always eager to lend a hand to those who may need it, finally found his way home. When he first moved to Indian Rocks Beach many years ago, he was amazed at the beauty of the beach but even more impressed with the spirit of the community. Remember how you felt on your birthday as a child? Feeling like something truly magical was possible on your special day? That was the feeling that living on IRB was like every day... even after all these years, that feeling remains the same, IRB really is a magical place! 

As an organization effectiveness consultant/speaker in theUS, UK, Norway, Mexico and West Indies, focused on emerging leaders and inspiring others to find passion in the work they do. His thoughts were filled with memories of Indian Rocks Beach. His heart belonged to the beaches he loved since early childhood on Florida’s Gulf Coast. A proud USF "Bulls" Alumni, and grateful for all he learned through Stanford University and the Global Institute for Leadership Development. His dream for decades has been to achieve daily passion for the work he does, wear deck shoes or flip flops to “work” everyday and earn millions of dollars to support the causes he feels deeply about. As the saying goes… “2 out of 3 ain’t bad” he has finally achieved two of these dreams… and as far as the latter he is still working on that. Apparently that is now up to you!

Chef Chat: From Purchase to Preparation to Presentation.

Chef J Mitchell walks you through the process, making meals and entertaining easy because we make it with love and passion for you. How to take the magic from the container to the table. In the days ahead, the Chef will soon be adding a step by step process on how Spicy Beaches products and be used to prepare great snacks and meals in just a matter of minutes. We will challenge his years of experience to show you exactly how to move from opening a bottle or jar, adding that to some of your traditional grocery list items and make a healthy meal with far less oil, sugar and salt that is required in traditional menu items. Imagine no more "freezer food" in your future, fresh ingredients and amazing flavor at your fingertips from your friends at Spicy Beaches.  The Chef suggests the following.

Fan-Feta-Tastic Greek inspired salsa.  Pound out chicken breast, spread on and roll up then bake. Enjoy on pita bread. Toss with fresh spinach for the perfect salad.

Hearts of Palm Harbor: Bake chicken, shrimp or white fish, add to the top of your dish in the oven. Toss with some baby greens for a salad. Top off chicken dishes.  
 .
Dunedin… Not Done Eatin’: Strawberry, Kiwi, Coconut Fruit Salsa. Perfect on a cake if you don’t want the frosting, or add as a topper on a bowl of ice cream. For a healthy snack or breakfast add to your favorite yogurt. Though this is intended for deserts, we have been told by chefs and creative "foodies" that after tasting it, they found it to be perfect for preparing Salmon on the grill.

IRB Rib Rub: Add 2 tablespoons oil & 1 teaspoon of rub to oil mix, rub down your beef or pork ribs.  Slow cook for the day, enjoy the flavor forever. If you are in the mood for grilling a stake, you may want to apply the rub as outlined here then brush on a light amount of either St. Pete Sweet heat or Spicy Ginger Mermaid Marinade to make it even more tender and succulent.

Sands of Thyme: Lightly dust your seafood or chicken with this before cooking for the perfect flavor.

St. Pete Sweet & Heat: The sweetness of papaya and honey with the heat of habanero, love the flavor. Add to anything when you want just the right amount of heat and a huge amount of flavor. A healthy choice when used as a marinade, a few teaspoons with your favorite food, cook by adding water instead of oil.
Sand Key Key Lime Prime Mermaid Marinade: Perfect touch for seafood lovers, just a teaspoon will go a long A great topper for chicken fajitas.

Spicy Ginger Mermaid Marinade: Great as Stir Fry, marinate chicken or drizzle a little over fish for a perfect kick. Marinade wings, using left over sauce in pot, add pat of butter to thicken and toss cooked wings in.

Among so many other options, using Fan-Feta-Tastic to prepare a Greek Style Pizzain less than 10 minutes with a quick 5 minute crust pre-bake. This one of "Mayor James" true favorites! You go ahead and eat those 30 minutes or less delivered things where the "pizza" and the box it comes in pretty much taste the same.
